I was trying to think of a healthy breakfast for us this morning as we opted not to travel over the coast mountains to see the folks(we'll do that once the roads are clear). Our family is celebrating Thanksgiving, with all the trimmings, on Saturday so we just lounged around this morning and decided to do a brunch. Here's the menu and one recipe you might enjoy, delicious and healthy.
French toast, on whole wheat bread
Turkey link sausages
Baked apple slices *recipe to follow
OJ/coffee
Baked apple slices
2 apples, peeled and cored, cut into thin slices
craisens, or crannies as I like to call them
sliced almonds
cinnamon
honey
Just mix together all the above ingredients, in whatever amounts you like. It should probably be around 1 or 2 Tablespoons of each, except cinnamon of course. Pour into a small casserole and bake for approx 30 min. or until apples are tender. I actually used the microwave to cook them part-way first and then finished them in the oven
(350 degrees) while the french toast was going.
Hope you are all having a blessed Thanksgiving as we all reflect on the goodness of God
